Holiday Camembert
The combination of Camembert, orange and brown sugar is a taste treat that is an ideal marriage with Cranberry Hazelnut Raincoast Crisps. Yummy addition: sprinkle a tablespoon of coarsely chopped hazelnuts on top of the brown sugar before broiling.
Cranberry Cosmopolitan
The TV series Sex and the City put this drink on the map, and it continues to be a hit - particularly at Christmas, thanks to its gorgeous ruby colour and cranberry garnish. At large parties, I always try to offer a special drink like this as an alternative to the ubiquitous wine and beer.
Sun-dried Cranberry & Hazelnut Stuffing
Another favourite holiday staple, this recipe actually inspired one of our most popular Raincoast Crisp flavours. It's very West Coast - we see fields of cranberries being harvested every fall and not too far into the Fraser Valley there are miles of hazelnut orchards. If you're a fan of sausage in your stuffing, simply add 1 pound of your favourite sausage meat, cooked, drained and crumbled, before adding the stock.
L.S.F.F. Tourtiere
This French Canadian meat pie has been a favourite at Lesley Stowe Fine Foods for years. A tradition at Christmas, our family has always served this dish on Christmas Eve with a good winter salad and some crusty bread. This tourtiere is great to have any winter night.
Lesley’s Pecan Shortbread with Valrhona Chunks
This shortbread is the to die for 'melt in your mouth' variety, made extra decadent with the addition of very good bittersweet chocolate. Skip the nuts if you like or try another type such as almonds, pinenuts, hazelnuts or macademia nuts. This batter freezes well. If you pre-scoop and freeze the balls, you can bake them as you need them.
Dried Cranberry & Candied Orange Semifreddo with Red Wine Sauce
A fabulous dessert for Christmas Dinner because it can easily made up to 2 weeks in advance and kept well wrapped in the freezer. Serve this along side your traditional plum pudding and everyone will be happy.
