Pappardelle with Baby Spinach, Olive Oil & Red Chili Flakes
This is a great, simple dinner that can be prepared practically without shopping - as long as your pantry has a few basics. Pick up some spinach and salad greens and you have dinner.
Ingredients
1 lb baby spinach leaves, washed
1 lb pappardelle (fettucine or linguine)
1/4 cup extra virgin olive oil
4 garlic cloves, cut in half
1 small onion, coarsely chopped
1 tbsp sea salt
1 tbsp pinenuts, toasted
Red pepper flakes to taste
Grated Parmesan cheese
Sea salt and pepper to taste
Directions
Bring a large pot of water to boil - at least 4 litres. Add the salt and pappardelle. Stir well and cook until the pasta is al dente.
Meanwhile, in a heavy sauté pan, sauté the garlic gently taking care not to brown the garlic. Add the onion and continue cooking until the onion is soft. Add the red pepper flakes, cook for a minute and remove the garlic. Add the spinach leaves and pinenuts and toss quickly to wilt. Drain the pasta and add to the spinach mixture. Add some parmesan, salt and pepper. Toss well, taste and serve with additional parmesan.
