Dianne McGlade, Newboro, Ontario | Just tried your rosemary pecan crisps. These are fabulous little works of art. I am going to tell everyone about these. They are fantastic alone or with cheese. For something different try with ice cream. Great as an ice cream sandwich for a lunch dessert. I tried them with a natural rum raisin ice cream and this was unusual and tasty. Start with cold ice cream. Cut into slices. Sandwich between two crisps. Freeze for 10-20 min. Terri, Edmonton, Alberta | | I was shopping yesterday at Save On foods in St. Albert Alberta...and came across these delightful crackers called Raincoat Crisps...simply the look of these crispy treats was alluring...I tore open the package as soon as I got into my car....I could not believe the unique and scrumptious taste of these treasures.....I have never taken the time to write or call about a product but I simply had to this time. As a mom of three I of course have purchased many products of crackers, cookies etc and never really been SURPRISED by the new products I have bought. I am also extremely cautious of purchasing nutritious products and appreciate how difficult it must be to produce a product of high nutrition without compromising taste.....YOU DID IT!! Thanks a lot and I look forward to purchasing other versions of these treasures Valerie Tappenden, St. Albert, Alberta | Yummy Recipes to go with your raincoast crisps: | Olive & Fig Tapenade 1cp. pitted nicoise olives or other brined black olives 1cp. mission figs cut in ¼’s 1tb.capers 1 large garlic clove crushed 3 tb.olive oil 1tb.lemon juice 1tsp. fresh thyme leaves Blend the figs in a food processor until roughly chopped add the olives, capers, garlic and thyme pulse until blended but still has a slightly coase texture.Add the lemon juice and olive oil.Season to taste with salt and pepper.Refridgerate until serving.Keeps 2-3 weeks. Best if made 1 day in advance. Serve with lesley stowe’s raincoast crisps rosemary raisin fig & olive or original on it’s own or with chevre or St. Andre cheese. Basil & Baby Shrimp Dip 1 lb fresh handpeeled baby shrimp 3 green onions finely chopped 2 tb finely chopped fresh basil ½ tsp tabasco ½ tsp Worcestershire sauce ¾ cp. sour cream ¾ cp.mayonnaise ½ tsp. grated lemon zest In a medium bowl stir the sour cream and mayonnaise together mix in the rest of the ingredients.Season with salt and pepper to taste.Refridgerate until serving. Serve with lesley stowe’s original raincoast crisps. Keeps 2 – 3 days | How well do you know your "crisps"? Take our trivia test and find out: - Raincoast Crisp crumbs make a great coating for chicken. Dip the chicken in flour, beaten egg and then crumbs ( add some cayenne and you'll have raincoast jerk chicken)
- sprinkle raincoast crisp crumbs on top of mac & cheese or your favourite casserole and you'll have a fabulous crunchy topping
- some people eat Raincoast Crisps like breakfast cereal with fresh fruit and milk!
- if you find your crisps getting a bit soft once the package has been open for awhile pop them into a preheated 325 degree oven for 5-7mins
- for those of us who admit to eating an entire box of Raincoast Crisps at once you will have gotten your entire daily recommendation for iron
- with no preservatives in them we consider Raincoast Crisps a 'fresh" cracker being at their prime for 3 - 6 months but they can be frozen for several months if you don't have easy access to a steady supply. Thaw them and crisp the crisps in a 325 degree oven for 5-7mins - yummy as ever
- Lesley's favourite match with the original Raincoast Crisp is spread with smoked trout mousse........available in our store. Another heavenly combination she indulges in is the Rosemary Raisin Pecan Crisps with cambozola cheese and italian proscuitto...
