lesley’s goat cheese brûlée

Put a spin on the classic crème brûlée textures, flavours and accompaniments by introducing a single new ingredient – goat cheese. When brûléed, goat cheese develops a sweet crust from the caramelised sugar and warmth that makes it sublimely spreadable. Try pairing with lesley stowe raincoast crisps® fig and olive, fig jam and a glass of cabernet sauvignon.

Ingredients

  • 4 free range eggs
  • ¾ cup (200ml) double cream
  • ½ (100ml) milk
  • 2 pinches of sea salt
  • Freshly ground pepper
  • ½ cup (100g) fresh goat cheese
  • 2 tbsp (25g) brown sugar, to caramelize

Directions

  • STEP 1: Preheat oven to 200°F
  • STEP 2: Whisk the 4 egg yolks and 2 whites, but without foaming it
  • STEP 3: Heat the milk and cream, and add salt and pepper
  • STEP 4: Gently add the milk/cream mixture, warm, over the beaten eggs
  • STEP 5: Add the crumbled goat cheese
  • STEP 6: Spoon into ramekins and bake for 40 minutes
  • STEP 7: Remove from oven, let cool
  • STEP 8: Sprinkle with brown sugar, and bake for an additional 10 minutes, until caramelized
  • STEP 9: Serve with lesley stowe raincoast crisps® fig and olive
